Main Ingredients
- 8 oz soba noodles
- 1 tablespoon sesame oil
- 1 cup shishito peppers
- 1 avocado, sliced
- 2 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- Sesame seeds for garnish
- Green onions for garnish
Cook soba noodles according to package instructions. Drain and set aside.
Heat sesame oil in a pan over medium heat. Add shishito peppers and cook until blistered, about 5 minutes.
In a small bowl, mix soy sauce, rice vinegar, honey, garlic, and ginger.
Toss soba noodles with the sauce, shishito peppers, and avocado slices.
Garnish with sesame seeds and green onions.
