Ingredients 

Main Ingredients

  • 8 oz soba noodles
  • 1 tablespoon sesame oil
  • 1 cup shishito peppers
  • 1 avocado, sliced
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions 

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. Heat sesame oil in a pan over medium heat. Add shishito peppers and cook until blistered, about 5 minutes.
  3. In a small bowl, mix soy sauce, rice vinegar, honey, garlic, and ginger.
  4. Toss soba noodles with the sauce, shishito peppers, and avocado slices.
  5. Garnish with sesame seeds and green onions.
