Ingredients 

Main Ingredients

  • 200 g soba noodles
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds
  • Optional: chopped cilantro, for garnish

Instructions 

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine cucumber, carrot, bell pepper, and green onions.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and grated ginger.
  4. Add soba noodles to the vegetables. Pour dressing over and toss to combine.
  5. Sprinkle with sesame seeds and garnish with cilantro if using.
  6. Serve immediately or chill for later.
