  • 2 large sweet potatoes peeled and cubed
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, ground cumin, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
  5. In the last 10 minutes of roasting, add the black beans and corn to the baking sheet to heat through.
  6. Remove from the oven and serve warm.
