- 1 lb Baby Potatoes
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
- 2 tablespoon Fresh Parsley chopped
1. Preheat your oven to 425°F (220°C).
2. Boil the baby potatoes in a pot of salted water until tender, about 15 minutes.
3. Drain the potatoes and place them on a baking sheet.
4. Use a fork to gently smash each potato.
5. Drizzle the potatoes with olive oil and sprinkle with salt, pepper, and garlic powder.
6. Bake in the preheated oven for 20 minutes or until crispy and golden.
7. Garnish with chopped fresh parsley before serving.
