- 2 medium sweet potatoes peeled and cubed

- 1 cup cooked quinoa
- 1 cup baby spinach
- 1 avocado avocado sliced
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet.
Roast in the oven for 20 minutes, or until tender and slightly crispy.
