Ingredients

  • 6 eggs
  • 1 cup fresh spinach, chopped
  • ½ cup grated cheese (cheddar or parmesan)
  • 1 small onion, finely chopped
  • 2 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  3. 3. Add the chopped spinach to the skillet and cook until wilted.
  4. 4. In a mixing bowl, whisk the eggs, grated cheese, salt, and black pepper together.
  5. 5. Pour the egg mixture into the skillet over the spinach and onions. Cook for a few minutes until the edges start to set.
  6. 6. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is fully set and golden on top.
  7. 7. Remove from the oven and let it cool slightly before slicing and serving.
