Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 Avocados, diced
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, finely chopped
  • 2 tablespoon Cilantro, chopped
  • 1 Lime, juiced
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 3-4 minutes per side.
  2. 2. In a large mixing bowl, combine diced avocados, cherry tomatoes, red onion, and cilantro.
  3. 3. Add the cooked shrimp to the bowl.
  4. 4. Drizzle with lime juice and olive oil. Season with salt and pepper to taste.
  5. 5. Toss gently to combine and serve immediately.
