Shrimp and Pasta Shell Salad

Main Ingredients
- 8 oz pasta shells
- 1 lb cooked shrimp peeled and deveined
- 1 cup cherry tomatoes halved
- ½ cup red onion finely chopped
- ¼ cup fresh parsley chopped
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
Cook pasta shells according to package instructions. Drain and rinse under cold water.
In a large mixing bowl, combine cooked pasta, shrimp, cherry tomatoes, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
Pour dressing over the salad and toss to combine. Serve chilled.
