  • 8 oz pasta shells
  • 1 lb cooked shrimp peeled and deveined
  • 1 cup cherry tomatoes halved
  • ½ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. Cook pasta shells according to package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, combine cooked pasta, shrimp, cherry tomatoes, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  4. Pour dressing over the salad and toss to combine. Serve chilled.
