Ingredients 

Main Ingredients

  • 8 oz shiitake mushrooms stems removed and sliced
  • 1 tablespoon olive oil
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 large eggs
  • 4 small tortillas
  • 0.25 cup shredded cheese optional
  • 1 avocado sliced
  • Salsa optional

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Toss sliced shiitake mushrooms with olive oil, smoked paprika, salt, and pepper.
  3. Spread mushrooms on a baking sheet and bake for 15 minutes, flipping halfway through.
  4. While mushrooms bake, scramble the eggs in a skillet over medium heat.
  5. Warm tortillas in a dry skillet or microwave.
  6. Assemble tacos by dividing scrambled eggs and shiitake bacon among the tortillas.
  7. Top with shredded cheese, avocado slices, and salsa if desired.
