Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive oil
  • to taste Salt and pepper
  • 8 oz Pasta shells
  • ¼ cup Grated Parmesan cheese
  • ¼ cup Chopped fresh parsley
  • 2 cloves Garlic minced
  • ¼ teaspoon Red pepper flakes optional

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until golden and tender.
  3. Cook pasta shells according to package instructions. Drain and set aside.
  4. In a large bowl, combine roasted cauliflower, cooked pasta, Parmesan cheese, parsley, garlic, and red pepper flakes. Toss well to combine.
  5. Serve warm.
