Main Ingredients
- 1 lb gnocchi store-bought or homemade
- 1 cup cherry tomatoes halved
- 1 cup bell peppers sliced
- 1 cup zucchini sliced
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the gnocchi, cherry tomatoes, bell peppers, and zucchini.
Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, and Italian seasoning. Toss to coat evenly.
Spread the mixture evenly on a sheet pan.
Bake for 20-25 minutes, or until the gnocchi are golden and the vegetables are tender.
