Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 2 tablespoon Olive oil
  • 1 cup White wine
  • 4 cups Chicken broth
  • 1 cup Mixed seafood (shrimp, scallops, squid)
  • 1 cup Parmesan cheese, grated
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onion and garlic, cook until softened.
  3. Add the Arborio rice and cook, stirring, for 2-3 minutes.
  4. Pour in the white wine and stir until absorbed.
  5. Gradually add the chicken broth, one ladle at a time, stirring constantly until absorbed.
  6. When the rice is almost cooked, add the mixed seafood and cook until done.
  7. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  8. Serve hot and enjoy!
