Ingredients

  • 4 cups potatoes, thinly sliced
  • 1 cup onion, chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup cheddar cheese, shredded
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, melt the butter over medium heat. Add the flour and whisk until smooth.
  3. Gradually add the milk, whisking constantly until the mixture thickens and bubbles.
  4. Remove from heat and stir in the cheese until melted. Season with salt and pepper.
  5. Layer half of the potatoes and onions in a greased baking dish. Pour half of the cheese sauce over the top. Repeat with the remaining potatoes, onions, and cheese sauce.
  6. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 30 minutes, or until the potatoes are tender and the top is golden brown.
  7. Let stand for 10 minutes before serving.
