Main Ingredients
- 2 cups all-purpose flour
- ¾ cup boiling water
- ¼ cup cold water
- ½ teaspoon salt
- ½ cup scallions, finely chopped
- ¼ cup vegetable oil for frying
In a large bowl, mix the flour and salt. Gradually add the boiling water, stirring with a wooden spoon until the dough forms.
Add the cold water and knead the dough until smooth. Cover and let it rest for 30 minutes.
Divide the dough into 4 equal parts. Roll each part into a thin circle.
Brush each circle with a thin layer of oil and sprinkle with chopped scallions. Roll up the dough into a log, then coil it into a spiral. Flatten gently with your hand.
Heat a skillet over medium heat and add a bit of oil. Fry each pancake until golden brown and crispy, about 2-3 minutes per side.
Cut into wedges and serve hot.
