Salmon and Beets Recipe

Main Ingredients
- 4 fillets Salmon
- 4 medium Beets peeled and cut into wedges
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 tablespoon Fresh dill chopped
Preheat your oven to 400°F (200°C).
In a mixing bowl, toss the beet wedges with 1 tablespoon of olive oil, salt, and pepper.
Spread the beets on a baking sheet and roast for 20 minutes.
After 20 minutes, push the beets to one side of the baking sheet and place the salmon fillets on the other side.
Drizzle the salmon with the remaining olive oil and sprinkle with salt and pepper.
Return the baking sheet to the oven and roast for another 10 minutes, or until the salmon is cooked through.
Remove from the oven and sprinkle fresh dill over the salmon and beets before serving.
