Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 pinch saffron threads
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste

Instructions 

  1. In a small bowl, soak saffron threads in 2 tablespoons of hot water.
  2. In a medium pot, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let stand for 5 minutes, then fluff with a fork.
  3. In a large pan, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  4. Add chickpeas and spinach to the pan, cook until spinach is wilted.
  5. Stir in saffron water and couscous. Season with salt and pepper. Serve hot.
