Ingredients

  • 2 cups cherry tomatoes halved
  • 1 cup zucchini sliced
  • 1 cup bell pepper sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 12 oz pasta any type
  • 1 cup parmesan cheese grated
  • 1 tablespoon basil chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place cherry tomatoes, zucchini, and bell pepper on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat.
  3. Roast the veggies in the oven for 20-25 minutes, until tender and slightly charred.
  4. While the veggies are roasting, cook the pasta according to the package instructions. Drain and set aside.
  5. In a large mixing bowl, combine the roasted veggies and cooked pasta. Toss with grated parmesan cheese and chopped basil.
  6. Serve warm and enjoy!
