- 2 cups Carrots sliced
- 2 cups Broccoli florets
- 1 cup Bell Peppers sliced
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine all the vegetables.
Drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat.
Spread the vegetables evenly on a baking sheet.
Roast in the preheated oven for 30 minutes, or until vegetables are tender and slightly browned.
Serve warm.
