Ingredients 

Vegetables

  • 2 cups Carrots sliced
  • 2 cups Broccoli florets
  • 1 cup Bell Peppers sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine all the vegetables.
  3. Drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat.
  4. Spread the vegetables evenly on a baking sheet.
  5. Roast in the preheated oven for 30 minutes, or until vegetables are tender and slightly browned.
  6. Serve warm.
