Instructions
Preheat the oven to 400°F (200°C).
In a mixing bowl, toss the bell peppers, zucchini, and cherry tomatoes with olive oil, salt, and black pepper.

Remove from the oven and let cool slightly.
In a large bowl, combine the roasted vegetables with mixed greens. Toss gently to mix.
