Ingredients

  • 2 cups chopped bell peppers any color
  • 2 cups chopped zucchini
  • 1 cup cherry tomatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups mixed greens

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the bell peppers, zucchini, and cherry tomatoes with olive oil, salt, and black pepper.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes, until tender and slightly charred.
  4. Remove from the oven and let cool slightly.
  5. In a large bowl, combine the roasted vegetables with mixed greens. Toss gently to mix.
  6. Serve immediately or chill for later.
