Ingredients 

Main Ingredients

  • 2 cups Mixed Vegetables (bell peppers, zucchini, red onion) chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 pieces Flatbreads
  • 1 cup Shredded Mozzarella Cheese

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss the chopped vegetables with olive oil, oregano, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 20 minutes, stirring halfway through.
  4. Place the flatbreads on another baking sheet. Top with the roasted vegetables and shredded mozzarella cheese.
  5. Bake in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven, slice, and serve warm.
