Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 0.25 cup chopped fresh parsley
  • 1 lemon, juiced

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss bell pepper, zucchini, and red onion with olive oil, salt, pepper, paprika, and cumin.
  3. Spread vegetables on a baking sheet and roast for 25-30 minutes.
  4. Cook couscous according to package instructions.
  5. Mix roasted vegetables with couscous.
  6. Add parsley and lemon juice, then toss to combine.
