Ingredients 

Main Ingredients

  • 2 cups Cherry tomatoes halved
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper freshly ground
  • 8 oz Brown rice pasta
  • 1 cup Basil leaves fresh, chopped
  • 1 clove Garlic minced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the halved cherry tomatoes on a baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper. Roast for 20-25 minutes until they are soft and slightly caramelized.
  3. While the tomatoes are roasting, cook the brown rice pasta according to the package instructions. Drain and set aside.
  4. In a large bowl, combine the cooked pasta, roasted tomatoes, chopped basil, and minced garlic. Toss everything together until well mixed.
  5. Serve warm and enjoy!
