Main Ingredients
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 apples, diced
- 1 small red onion, finely chopped
- 1 tablespoon lemon juice
- 1 tablespoon honey
- ¼ cup chopped fresh cilantro
Preheat oven to 400°F (200°C).
Toss the cubed squash with olive oil, salt, and pepper. Spread on a baking sheet.
Roast for 25-30 minutes, until tender and lightly browned.
In a bowl, combine diced apples, red onion, lemon juice, honey, and cilantro. Mix well.
Serve the roasted squash topped with apple salsa.
