Ingredients 

Main Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 apples, diced
  • 1 small red onion, finely chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • ¼ cup chopped fresh cilantro

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed squash with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes, until tender and lightly browned.
  4. In a bowl, combine diced apples, red onion, lemon juice, honey, and cilantro. Mix well.
  5. Serve the roasted squash topped with apple salsa.
