Ingredients 

Main Ingredients

  • 2 cups Carrots peeled and chopped
  • 2 cups Parsnips peeled and chopped
  • 2 cups Sweet Potatoes peeled and chopped
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the carrots, parsnips, and sweet potatoes.
  3. Drizzle the olive oil over the vegetables and toss to coat.
  4. Sprinkle with salt, black pepper, and dried thyme. Toss again to distribute the seasoning evenly.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 45 minutes, or until the vegetables are tender and golden brown, stirring halfway through.
  7. Remove from the oven and serve warm.
