  • 2 cups Carrots, chopped
  • 2 cups Parsnips, chopped
  • 2 cups Sweet Potatoes, chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine all the chopped vegetables.
  3. Drizzle with olive oil, then sprinkle with salt, pepper, and thyme. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 45 minutes, stirring halfway through, until the vegetables are tender and golden brown.
