  • 2 cups Roasted Red Peppers
  • ½ cup Parmesan Cheese grated
  • ¼ cup Pine Nuts toasted
  • 2 cloves Garlic minced
  • ½ cup Olive Oil
  • 1 lb Pasta your choice
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and set aside.
  2. 2. In a blender, combine roasted red peppers, Parmesan cheese, pine nuts, garlic, and olive oil. Blend until smooth.
  3. 3. Toss the cooked pasta with the red pepper pesto. Season with salt and black pepper to taste.
  4. 4. Serve immediately and enjoy!
