Ingredients

  • 2 cups Roasted Red Peppers chopped
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese grated
  • 1 lb Pasta cooked according to package instructions
  • 2 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Place the chopped red peppers on a baking sheet and drizzle with olive oil. Roast for 20 minutes.
  3. 3. In a blender, combine the roasted red peppers, garlic, and heavy cream. Blend until smooth.
  4. 4. In a saucepan, heat the blended mixture over medium heat. Stir in the grated Parmesan cheese until melted and smooth.
  5. 5. Add the cooked pasta to the sauce and toss to coat. Season with salt and black pepper to taste.
  6. 6. Serve hot, garnished with extra Parmesan cheese if desired.
