Roasted Red Pepper Hummus Crostini

Main Ingredients
- 1 can Chickpeas drained and rinsed
- 2 pieces Roasted red peppers jarred or homemade
- 2 tablespoons Tahini
- 1 clove Garlic minced
- 2 tablespoons Lemon juice freshly squeezed
- 2 tablespoons Olive oil extra virgin
- to taste Salt
- to taste Black pepper freshly ground
- 1 baguette French baguette sliced into ½ inch rounds
- 2 tablespoons Olive oil for brushing
Preheat your oven to 375°F (190°C).
Brush the baguette slices with olive oil and place them on a baking sheet.
Bake for 10 minutes or until golden and crispy. Set aside to cool.
In a food processor, combine chickpeas, roasted red peppers, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
Season with salt and black pepper to taste. Blend again to mix.
Spread the hummus on the cooled crostini and serve immediately.
