Instructions
Preheat your oven to 450°F (230°C).
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
Rub the mixture all over the lamb.
Place the lamb on a baking sheet, bone side down.
Roast in the preheated oven for 20-25 minutes for medium-rare.
Let it rest for 10 minutes before slicing.
