  • 1 rack lamb about 8 ribs
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the lamb.
  4. Place the lamb on a baking sheet, bone side down.
  5. Roast in the preheated oven for 20-25 minutes for medium-rare.
  6. Let it rest for 10 minutes before slicing.
