Ingredients

  • 1 whole Duck about 5-6 pounds
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 2 cloves Garlic minced
  • 1 tablespoon Thyme fresh

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the duck and pat it dry with paper towels.
  3. Rub the duck with olive oil, salt, and pepper.
  4. Stuff the duck with minced garlic and fresh thyme.
  5. Place the duck in a roasting pan, breast side up.
  6. Roast for about 2 hours, basting occasionally with the pan juices.
  7. Let the duck rest for 10 minutes before carving.
