- 2 Delicata squash
- 2 tablespoons olive oil
- Salt and pepper to taste
- ½ cup blue cheese
- ¼ cup heavy cream
- 1 tablespoon chopped fresh parsley
Preheat oven to 400°F (200°C).
Cut the Delicata squash in half lengthwise and scoop out the seeds.
Slice the squash into ½-inch thick rings.
Toss the squash rings with olive oil, salt, and pepper.
Arrange the squash on a baking sheet and roast for 20-25 minutes, until tender and golden.
While the squash is roasting, heat the heavy cream in a small saucepan over low heat.
Add the blue cheese to the cream and stir until melted and smooth.
Drizzle the blue cheese sauce over the roasted squash and sprinkle with chopped parsley.
