Ingredients 

Main Ingredients

  • 2 Delicata squash sliced into half-moons
  • 2 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 8 Tortillas corn or flour
  • 1 cup Red cabbage shredded
  • 1 Avocado sliced
  • ¼ cup Cilantro chopped
  • 1 Lime cut into wedges

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, toss the delicata squash slices with olive oil, chili powder, cumin, and salt.
  3. Spread the squash slices on a baking sheet and roast for 25-30 minutes, until tender and golden brown.
  4. Warm the tortillas in a dry skillet over medium heat.
  5. Assemble the tacos by placing roasted squash on each tortilla, then topping with shredded red cabbage, avocado slices, and chopped cilantro.
  6. Serve with lime wedges on the side.
