Roasted Delicata Squash Kale Salad
A delicious and healthy salad featuring roasted delicata squash and fresh kale.

Main Ingredients
- 2 units Delicata squash sliced into half-moons
- 4 cups Kale chopped
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 cup Quinoa cooked
- 0.5 cup Feta cheese crumbled
- 0.25 cup Pumpkin seeds toasted
Preheat oven to 400°F (200°C).
Place sliced delicata squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25 minutes or until tender.
In a large mixing bowl, combine chopped kale, cooked quinoa, crumbled feta cheese, and toasted pumpkin seeds.
Add the roasted delicata squash to the bowl and toss everything together.
Serve immediately or refrigerate for later.
