Ingredients

  • 2 cups Cherry Tomatoes halved
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Dried Oregano
  • 1 cup Cooked Quinoa
  • ¼ cup Feta Cheese crumbled
  • ¼ cup Fresh Basil chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cherry tomatoes with olive oil, salt, pepper, and dried oregano.
  3. Spread the tomatoes on a baking sheet and roast for 20 minutes.
  4. While the tomatoes are roasting, prepare the quinoa according to package instructions.
  5. Once the tomatoes are done, assemble the bowls with quinoa, roasted tomatoes, crumbled feta, and fresh basil.
