Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt
  • 8 pieces Tortillas small
  • 1 cup Red cabbage shredded
  • ½ cup Cilantro chopped
  • 1 piece Lime cut into wedges

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, toss cauliflower florets with olive oil, chili powder, cumin, garlic powder, and salt.
  3. Spread cauliflower on a baking sheet and roast for 25 minutes, until tender and slightly browned.
  4. Warm tortillas in a dry skillet over medium heat.
  5. Assemble tacos by placing roasted cauliflower on tortillas, then topping with shredded red cabbage, chopped cilantro, and a squeeze of lime.
