Main Ingredients
- 1 head Cauliflower cut into florets
- 2 tablespoon Olive oil
- 1 teaspoon Chili powder
- ½ teaspoon Cumin
- ½ teaspoon Garlic powder
- ½ teaspoon Salt
- 8 pieces Tortillas small
- 1 cup Red cabbage shredded
- ½ cup Cilantro chopped
- 1 piece Lime cut into wedges
Preheat oven to 425°F (220°C).
In a mixing bowl, toss cauliflower florets with olive oil, chili powder, cumin, garlic powder, and salt.
Spread cauliflower on a baking sheet and roast for 25 minutes, until tender and slightly browned.
Warm tortillas in a dry skillet over medium heat.
Assemble tacos by placing roasted cauliflower on tortillas, then topping with shredded red cabbage, chopped cilantro, and a squeeze of lime.
