Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.

In a mixing bowl, combine the roasted cauliflower, cherry tomatoes, red onion, parsley, and lemon juice.
Toss well and serve warm or at room temperature.
