Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • ¼ cup Fresh parsley chopped
  • 2 tablespoon Lemon juice

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25 minutes, until golden and tender.
  4. In a mixing bowl, combine the roasted cauliflower, cherry tomatoes, red onion, parsley, and lemon juice.
  5. Toss well and serve warm or at room temperature.
