Ingredients

  • 1 head Cauliflower cut into florets
  • ½ cup Hazelnuts toasted and chopped
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Lemon juice freshly squeezed
  • ¼ cup Parsley chopped

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper in a mixing bowl.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, until golden and tender.
  4. In a large bowl, combine the roasted cauliflower, hazelnuts, lemon juice, and parsley.
  5. Toss everything together and serve warm or at room temperature.
