  • 1 lb Carrots peeled and cut into sticks
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Cilantro chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the carrots with olive oil, salt, and black pepper.
  3. Spread the carrots out on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized.
  5. Remove from the oven and transfer to a serving dish. Sprinkle with chopped cilantro before serving.
