Ingredients 

Main Ingredients

  • 1 lb carrots peeled and chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender.
  4. In a large pot, sauté onion and garlic until soft.
  5. Add roasted carrots, turmeric, and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 15 minutes.
  7. Blend soup until smooth. Adjust seasoning.
  8. Serve hot, garnished with fresh parsley if desired.
