Main Ingredients
- 1 lb carrots peeled and chopped
- 1 onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon ground turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Preheat oven to 400°F (200°C).
Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet.
Roast for 25-30 minutes until tender.
In a large pot, sauté onion and garlic until soft.
Add roasted carrots, turmeric, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Blend soup until smooth. Adjust seasoning.
Serve hot, garnished with fresh parsley if desired.
