Ingredients

  • 4 medium beets scrubbed clean
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil and place them on a baking sheet.
  3. Roast in the preheated oven for 45 minutes, or until the beets are tender when pierced with a fork.
  4. Remove from the oven and let cool slightly. Peel the beets and cut them into wedges.
  5. Toss the beet wedges with olive oil, salt, and black pepper. Serve warm or at room temperature.
