Roasted Beet Salad With Pears And Walnuts

Main Ingredients
- 4 beets medium-sized, trimmed and scrubbed
- 2 pears ripe, thinly sliced
- ½ cup walnuts toasted
- 4 cups mixed greens
- ¼ cup goat cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- to taste salt and pepper
Preheat oven to 400°F (200°C).
Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.
Let beets cool, then peel and cut into wedges.
In a large bowl, combine mixed greens, sliced pears, and roasted beets.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
Drizzle dressing over the salad and toss gently to combine.
Top with toasted walnuts and crumbled goat cheese. Serve immediately.
