Ingredients

  • 4 medium beets trimmed and scrubbed
  • 2 cups mixed greens
  • 4 oz goat cheese crumbled
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in foil and roast for 45 minutes or until tender. Let cool, then peel and slice.
  3. In a mixing bowl, combine mixed greens, sliced beets, crumbled goat cheese, and toasted walnuts.
  4. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss gently to combine.
