Main Ingredients
- 4 medium beets peeled and cut into wedges
- 1 cup feta cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- to taste salt
- to taste black pepper
Preheat oven to 400°F (200°C).
Toss beets with olive oil, salt, and pepper. Spread on a baking sheet.
Roast for 45 minutes, or until tender. Let cool.
In a mixing bowl, combine roasted beets, feta, balsamic vinegar, and honey. Toss gently.
Serve immediately or chill for later.
