  • 4 medium beets peeled and cut into wedges
  • 1 cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss beets with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 45 minutes, or until tender. Let cool.
  4. In a mixing bowl, combine roasted beets, feta, balsamic vinegar, and honey. Toss gently.
  5. Serve immediately or chill for later.
