  • 4 artichokes trimmed and halved
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 2 cloves garlic minced
  • 1 lemon lemon sliced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, toss the artichokes with olive oil, salt, pepper, and minced garlic.
  4. Spread the artichokes out on the baking sheet in a single layer. Place lemon slices on top.
  5. Roast in the preheated oven for 45 minutes, or until the artichokes are tender and golden brown.
  6. Serve warm, optionally with a squeeze of fresh lemon juice.
