Ingredients 

Main Ingredients

  • 1 whole Turkey about 12-14 pounds
  • ½ cup Olive oil
  • ¼ cup Lime juice freshly squeezed
  • 4 cloves Garlic minced
  • 2 tablespoon Aji amarillo paste
  • 1 tablespoon Cumin ground
  • 1 tablespoon Paprika smoked
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper freshly ground

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix olive oil, lime juice, minced garlic, aji amarillo paste, cumin, paprika, salt, and black pepper.
  3. Rub the mixture all over the turkey, making sure to get under the skin and inside the cavity.
  4. Place the turkey in a roasting pan and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 165°F (74°C).
  5. Baste the turkey every 30 minutes with the juices from the pan.
  6. Once done, let the turkey rest for 20 minutes before carving.
