Main Ingredients
- 1 cup Rice cooked
- 2 cups Milk
- ¼ cup Sugar
- 1 teaspoon Vanilla Extract
- 2 Mangoes peeled and diced
1. In a saucepan, combine the cooked rice, milk, and sugar. Cook over medium heat, stirring frequently, until the mixture thickens, about 20 minutes.
2. Remove from heat and stir in the vanilla extract. Let it cool to room temperature.
3. In parfait glasses, layer the rice pudding and diced mangoes. Start with a layer of rice pudding, followed by a layer of mangoes. Repeat until the glasses are filled.
4. Chill in the refrigerator for at least 1 hour before serving.
