Ingredients

  • 1 cup rice cooked and cooled
  • 1 large mango diced
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Cook the rice according to package instructions. Let it cool completely.
  2. 2. In a large mixing bowl, combine the cooked rice, diced mango, cucumber, red onion, and cilantro.
  3. 3. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  4. 4. Pour the dressing over the rice mixture and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
