Ingredients

  • 2 cups Cooked pinto beans
  • 2 tablespoons Olive oil
  • 1 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ cup Vegetable broth

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the cooked pinto beans, ground cumin, salt, and black pepper. Stir to combine.
  5. Pour in the vegetable broth and cook, mashing the beans with a spatula until they reach your desired consistency, about 10 minutes.
  6. Serve warm as a side dish or use as a filling for tacos or burritos.
