Ingredients

  • 2 pounds red-skinned potatoes cut into chunks
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 stalks celery chopped
  • ½ cup red onion diced
  • 2 tablespoon fresh dill chopped

Instructions 

  1. 1. Boil potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add cooled potatoes, celery, red onion, and fresh dill to the bowl. Mix well.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
