Ingredients

  • 2 lbs red potatoes cut into chunks
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 stalks celery chopped
  • 1 small red onion diced
  • 2 tablespoon fresh dill chopped

Instructions 

  1. 1. Boil the red potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, salt, and black pepper.
  3. 3. Add the cooled potatoes, celery, red onion, and fresh dill to the bowl. Mix well to coat all ingredients.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
